Tomato - Onion Curry

Courtesy – my mom.

Ingredients

  1.  Tomatoes – 2
  2.  Onion – 1 big
  3.  Mustard seeds – 1 teaspoon
  4.  Red Chilli – 2
  5.  Curry Leaves – 2 stalks
  6.  Green Chillies – 3
  7.  Black Pepper powder (Coarse) – 1 teaspoon
  8.  Asafoetida Powder – 1 teaspoon
  9. Garam Masala – ½ teaspoon
  10. Cooking Oil – 1 ½ tablespoon
  11. Salt – to taste
  12. Water

The Method

Heat the oil in a pan. When it is hot enough, put the mustard seeds into the oil. When it bursts, add the curry leaves and red chillies. While putting the red chillies, cut the red chillies into two with hand. Add the green chillies, and then stir for about a minute in a low flame. Add the cut onions into this. Keep stirring till the onion starts to change its colour. Now, add the powders – Asafoetida, Garam Masala and Black Pepper in that order and stir well. When the onions get the golden brown colour, add the cut tomatoes. Add the salt and stir. After mixing thoroughly, add roughly 2 cups of water to it and mix properly. You can add more water if you wish it to have gravy. Bring it to boil, while stirring occasionally. Let it boil on simmer for about 3 minutes. Here it is – Tomato-Onion Curry. You can have it with roti or rice. If you wish to make it dry, you can also reduce the amount of water and use this as a side dish for rice. Enjoy cooking.
