Tomato - Onion Curry

Ingredients
- Tomatoes – 2
- Onion – 1 big
- Mustard seeds – 1 teaspoon
- Red Chilli – 2
- Curry Leaves – 2 stalks
- Green Chillies – 3
- Black Pepper powder (Coarse) – 1 teaspoon
- Asafoetida Powder – 1 teaspoon
- Garam Masala – ½ teaspoon
- Cooking Oil – 1 ½ tablespoon
- Salt – to taste
- Water
The Method
Heat the oil in a pan. When it is hot enough, put the
mustard seeds into the oil. When it bursts, add the curry leaves and red
chillies. While putting the red chillies, cut the red chillies into two with
hand. Add the green chillies, and then stir for about a minute in a low flame.
Add the cut onions into this. Keep stirring till the onion starts to change its
colour. Now, add the powders – Asafoetida, Garam Masala and Black Pepper in
that order and stir well. When the onions get the golden brown colour, add the
cut tomatoes. Add the salt and stir. After mixing thoroughly, add roughly 2
cups of water to it and mix properly. You can add more water if you wish it to
have gravy. Bring it to boil, while stirring occasionally. Let it boil on
simmer for about 3 minutes. Here it is – Tomato-Onion Curry. You can have it
with roti or rice. If you wish to make it dry, you can also reduce the amount
of water and use this as a side dish for rice. Enjoy cooking.

The First One
Well, now that I have moved to a new house, alone in a 1BHK,
I can use my free time for R&D in my favourite place – My Cooking Lab a.k.a
The Kitchen, and make myself the lab rats for testing the results!!
As a bachelor, it is a great difficulty to make food with
the right taste and as we get from our mom. So, in this humble endeavour of
mine, I shall embark on a mission to enlighten the numerous bachelors out there
who are struggling to keep their stomachs under control from the shitty mess
and hotel foods.
Almost all the recipes that I will be sharing in this space
are told to me by my mom over the phone. What I do is just try to make it
simpler and easy for us, the bachelors, to understand and test it upon our
roommates.
Before continuing further, let me tell you something. This
is a warning that there is no guarantee that whatever I have written in the
recipe is good cooking practices. There may be some bad practice as well as
good ones. I myself like the taste of black pepper a lot. So, you may find the
amount of pepper more. If you find so, please reduce it, which is good for your
tongue as well as all the organs in your food canal.
Well, for the first time, being first time, I am going to
give the recipe of a dish which my mom told me how to make. I have tried and
succeeded in making it, but with a tinge of salt more. So, here is it.
Potato Stew
Ingredients
- Boiled Potato – 2 or 3 Medium Sized
- Ginger (chopped) – 1 tablespoon
- Green Chilly (cut in small pieces) – ½ teaspoon
- Curry Leaves – 1 stalk
- Coconut Milk – 500 ml
- Salt – to taste
- Cooking Oil – 2 tablespoon
How to make
Heat the oil in a pan. Put the ginger into the hot oil and
stir till the colour of the ginger changes. Add the curry leaves and green
chilli to this and stir well. Smash the boiled potato and put it into the pan.
Mix this well and add the coconut milk. Add salt to taste and stir the mixture
well. Allow this to boil in simmer for 5 minutes. The potato stew is ready. It
is best when you have it with Appam or Idiyappam. Recipes for those will be
followed sometime later.
